Chicken Coconut Curry

1tbsp Olive oil
2 garlic cloves
1 medium onion
1/2 tbsp ground turmeric
1/2 tbsp ground cumin
1 tbsp ground coriander
1/2 tsp onion powder
1 sweet potato (chopped into cubes)
1/2 cup chopped scallions
2 celery stalks, chopped
1 cup water
sea salt
1 lb organic chicken breast, cooked and cut into pieces
1 13.5 can full fat coconut milk
Over heat, add oil to skillet. Add garlic and onion until slightly browned and fragrant.
Stir in spice mix to coat the onions. Then add sweet potato, celery, and scallions with water. Simmer the vegetables until sweet potato is soft. Finally add the coconut milk and chicken. Let flavors mix and simmer!
We served a top rice!
