Acorn Squash Taco Bowl

1 Acorn squash

1 lb ground turkey

Cilantro

1 clove garlic

Green pepper and sweet pepper

½ Red onion

Rice

1 can Black beans

Taco seasoning

Shredded cheese


Preheat oven to 400 degrees

Cut acorn squash in half, remove seeds, “paint” oil and add salt/pepper to top. Place in a glass dish or sheet pan and put in oven for about 40 minutes.

Place rice in bowl to start cooking, once the rice is finished add black beans!


Brown ground turkey with taco seasoning, drain, put back into pan and add veggies and cilantro.


When acorn squash is finished, add meat mixture to acorn squash, top with cheese and place back in oven for 5 minutes. Take out and enjoy! Serve with rice and beans and hot sauce!
